This week is all about spring frost in Chablis! We've had our fourth night of frost this week with temperatures going down to -2° Celsius. We don't know the extend of the damage but we're afraid the 2016 harvest will be impacted. Here we are in Premier Cru Montmains protected by wax candles.

In the night of monday to tuesday the temperature lowered below zero degrees Celsius. The newly appeared vineshoots are very sensible to frost starting at -2 degrees Celsius. Our parcel of Chablis on the county of Beines and our Premiers Crus Fourchaume and Homme Mort are protected by watersprinklers. The transformation of water to ice keeps the temperature inside the ice at zero degrees and thus protects the vineshoots.

First use of inter-vine hoes. This year is the third that we stopped using chemical weed-killers in the vines whose wines are bottled. We've achieved to maintain the grass in these vines and most importantly bring back life to the soils. Starting this year our ensemble of parcels will not see any more chemical weed-killing, or 22 hectares that will be mecanicaly weeded! Today we start the 'baisser'. The main advantage is to give the vineyard the support, to have all the future grapes at the same level, to ventilate the vegetation and to have a more constant grow between the different shoots. We need about 30 hours of 'baissage' per hectare. Here we are in our parcel of Chablis "Les Champacots".
