Today we start bottling the 2015 vintage.
After 12 months of maturity in steel barrels we will need 3 days to bottle 26.467 bottles of Chablis and 1.334 bottles of Petit Chablis.
Our other wines (Chablis Héritage and the totality of Premiers Crus) will be next up in March 2017, after 18 months of maturity.

This year we are very proud to announce the birth of a new cuvée which will be presented to you very soon!

Maintenance of the soil of an extracted parcel.
Last year we've extracted a parcel of Chablis in Milly. After making sure to remove the maximum of roots we are completing a superficial labour to ventilate the ground. We will sow a vegetation cover next fall.
This parcel will then be left to rest for the next 7 years.

Everything is getting into shape! The grapes have entered the maturity phase, our work is done (except for a last treatment next week). We leave the fate of this 2016 vintage in the hands of the weather forecast of August and September...

Down in the cellar we've filtered the Petit Chablis and Chablis 2015. They will be bottled in the beginning of September!
