After 17 months of aging we are bottling Chablis Héritage 2014 as well as our Premiers Crus 2014: Côte de Léchet, Montmains, Vaillons, Fourchaume and Homme Mort. If everything goes according to plan Fabien, Christophe, Agnès, Olivier et John should bottle about 22.133 bottles and 705 magnums in 2 days.

The slight morning frost gives us time to apply our fertilizer. We use an organic fertilizer of horse, cattle and poultry compost to nourish the soils of our vines. These small bits of fertilizer will be buried current March during labour.

Today we enjoy the calm to spread the compost that we made from cattle manure. The compost was scattered over about 1 hectare (1 of our 2 parcels of Premier Cru Fourchaume and one parcel of Chablis). The benefit is to use a local fertilizer whose origine we know, and alive, the compost is very rich with mushrooms, bacteria, microfaune... The purpose is to relaunch life in our souls and give more expression to our terroir.

We've just finished filtration of Chablis Premiers Crus 2014 and Chablis Héritage 2014. After fining the wines, which happened 3 weeks ago, filtration is needed to make the wines clear and brilliant without emaciating them. This proces also eliminates certain unwanted micro-organisms to assure a good evolution of the wine. For this we use a filter with kieselgur. The wines are now ready for bottling, which is planned for february 21st and 22nd.
